Method
- In a skillet, heat olive oil over medium heat and brown the sausage on all sides.
- Transfer the browned sausage to the slow cooker.
- Add sliced bell peppers, onion, garlic, diced tomatoes, Italian seasoning, salt, and pepper to the slow cooker.
- Stir to combine all ingredients thoroughly.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot, optionally over rice or in a sub roll.
