Delightful Rolo Cookies for Every Occasion

Rolo Cookies made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips
  • 20 Rolo candies unwrapped

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, using an electric mixer, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs and vanilla extract to the butter-sugar mixture and mix until well combined.
  5. Gradually add the flour mixture to the wet ingredients, beating until just combined.
  6. Fold in the chocolate chips gently with a spatula.
  7. Chill the cookie dough in the refrigerator for 30 minutes.
  8. Scoop out tablespoon-sized portions of dough and place them on a baking sheet lined with parchment paper, leaving space between each cookie.
  9. Make an indentation in the center of each cookie and place a Rolo candy inside.
  10. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
