Preheat your oven to 350 degrees F and prepare a baking sheet with parchment paper.
In a large mixing bowl, combine the red velvet cake mix, vegetable oil, eggs, and baking powder. Mix until smooth.
Cover the dough with plastic wrap and refrigerate for about 30 minutes.
Once chilled, take about 2 tablespoons of dough and roll into balls. Roll each ball in powdered sugar until fully coated.
Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are set but the center looks soft.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
