Method
- Brown the sausage in a large pot over medium heat.
- Add onion, garlic, and bell pepper; sauté until softened.
- Stir in the diced potatoes and Cajun seasoning; cook for 2-3 minutes.
- Pour in the chicken broth and add diced tomatoes.
- Reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
- Add thyme, salt, and pepper to taste; simmer for another 5 minutes.
- Serve hot, garnished with chopped green onions.
