Ingredients

  • 1 lb ground turkey
  • 2 garlic cloves minced
  • 1/4 tsp sea salt
  • 1/2 tsp black pepper
  • 6 oz fresh cranberries
  • 1/2 cup coconut sugar
  • 4 oz pineapple juice
  • 1 egg beaten
  • 1/2 tsp dried thyme
  • 1/4 tsp ground ginger

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, combine ground turkey, minced garlic, sea salt, black pepper, thyme, ginger, and egg.
  • Using a tablespoon, scoop out the turkey mixture and form into balls.
  • Place the formed meatballs on a greased baking sheet.
  • Bake for 20 minutes or until they reach an internal temperature of 165°F.
  • Meanwhile, prepare the cranberry sauce by combining cranberries, coconut sugar, and pineapple juice in a saucepan over medium heat.
  • Cook until cranberries pop and the mixture thickens, about 10-15 minutes.
  • Once the meatballs are done, add them to the cranberry sauce and stir to coat.
  • Simmer together for an additional 5-10 minutes before serving.
