Transfer the chicken mixture to the prepared baking sheet, shaping it into a loaf approximately 8 x 4 inches in size.
Bake in the preheated oven for 30-35 minutes or until the internal temperature reads 165°F (74°C).
Remove the meatloaf from the oven and sprinkle the shredded mozzarella cheese on top.
Return the meatloaf to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
Allow the meatloaf to rest for about 5 minutes before slicing and serving.
