Indulgent Chocolate Chip Cookie Bombs for Home Bakers

Chocolate Chip Cookie Bombs made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
  • 1 cup extra chocolate for filling

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs and vanilla extract to the butter mixture. Beat until well combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in chocolate chips and extra chocolate for filling.
  7. Scoop a portion of dough, place a piece of extra chocolate in the center, and encase it with more dough.
  8. Place the cookie bombs on a lined baking sheet, leaving space for spreading.
  9. Bake in the preheated oven for 10-12 minutes or until golden around the edges.
  10. Let them cool on the baking sheet for a few minutes, then transfer to a wire rack.
