Preheat oven to 375°F (190°C).
Grease a medium baking dish with olive oil or cooking spray.
In a large bowl, mix broccoli, bell pepper, zucchini, tomatoes, spinach, onion, and cottage cheese.
In a separate bowl, whisk eggs with olive oil, garlic powder, onion powder, salt, pepper, and oregano.
Pour egg mixture into veggie mix and stir well.
Transfer to prepared baking dish and spread evenly.
Sprinkle mozzarella evenly over the top.
Bake for 30–35 minutes until golden and center is set.
Let rest 5 minutes before slicing and serving.
