- Add the chickpeas, cherry tomatoes, bell pepper, cucumber, and red onion to the bowl.
- Fold in the chopped parsley and mix thoroughly.
- Let the salad marinate for at least 15 minutes, or up to an hour, at room temperature.
- Taste and adjust the seasoning, adding more salt or pepper if needed.
- Serve the salad in bowls, optionally garnished with more parsley.
