  3. Grill the chicken thighs for 5-6 minutes per side until charred and cooked through (internal temp of 165°F).
  4. While chicken cooks, make the relish: In a bowl, combine roasted red peppers, onion, garlic, parsley, lemon juice, red pepper flakes, and a pinch of salt. Stir well and chill for 10 min.
  5. Once chicken is grilled, let rest for 5 minutes. Then, top each thigh with a spoonful of roasted pepper relish and sprinkle herbed feta and oregano on top.
  6. Serve warm with a side of couscous, salad, or grilled veggies 🌿.
