Preheat your oven to 350°F (175°C).
In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.
Add the vanilla extract and ground cinnamon, mixing until well combined.
Gradually add the flour and salt, mixing until just combined.
Form the dough into a log and wrap it in plastic wrap, refrigerating for at least 30 minutes.
Once chilled, slice the dough into ¼-inch thick rounds and place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 12–15 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
