Spiced Pear Muffins made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter melted
  • 1/2 cup whole milk
  • 1 tsp pure vanilla extract
  • 2 cups ripe pears diced

Method

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray it with non-stick spray.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a separate medium bowl, combine the melted butter, milk, egg, and vanilla extract. Whisk until fully combined.
  4. Pour the wet ingredients into the dry ingredients, and gently stir until almost mixed.
  5. Gently fold in the diced pears until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin cups, filling each about 2/3 full to allow space for rising.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
  9. If desired, sprinkle additional cinnamon sugar on top before baking for added sweetness.
