Deliciously Creamy Pumpkin Pie Bars for Fall Baking

Ingredients
  

  • ¾ cup unsalted butter room temperature
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon kosher salt
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • ½ teaspoon maple extract optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the crust by creaming together butter and powdered sugar. Add in vanilla extract, flour, and salt, mixing until a dough forms.
  3. Line a 9x9 inch baking pan with parchment paper and lightly grease it with oil spray.
  4. Press the dough evenly into the bottom of the prepared pan, then poke holes in it with a fork.
  5. Bake the crust for 15 minutes, then remove and let cool slightly.
  6. In a large bowl, whisk together brown sugar, granulated sugar, pumpkin puree, eggs, pumpkin pie spice, and salt until fully combined.
  7. Pour the pumpkin mixture over the pre-baked crust, spreading it evenly.
  8. Bake the bars for an additional 25-30 minutes until the filling is set and a toothpick inserted in the center comes out clean.
  9. Let the bars cool completely in the pan before lifting them out with the parchment paper and cutting into squares.
