Ingredients

  • 1 cup butter softened
  • 2 Tbsp dry strawberry jello mix
  • 1 cup sugar
  • ½ tsp vanilla extract
  • ½ tsp almond extract
  • 2 ½ cups all-purpose flour
  • 1 3.5 oz pkg vanilla instant pudding mix
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 cups white chocolate chips

Instructions

  • Cream together the softened butter, dry strawberry jello mix, and sugar in a large mixing bowl until creamy.
  • Add the eggs, vanilla extract, and almond extract, then beat until well combined.
  • In a separate bowl, mix together the flour, vanilla pudding mix, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Then fold in the white chocolate chips.
  • Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper or a silicone mat.
  • Bake in a preheated oven at 350°F for about 10 minutes or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool completely.
