Bright and Chewy Lemon Cookies for Any Occasion

Lemon Cookies made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 cup 226g unsalted butter
  • 1 1/2 cups 300g granulated sugar
  • 3 Tbsp lemon zest
  • 2 Tbsp fresh lemon juice
  • 1 large egg
  • 3 cups 360g all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup 50g sugar for rolling

Method
 

  1. In a mixing bowl, beat the butter, sugar, and lemon zest together until creamy.
  2. Add the lemon juice and egg, mixing until fully combined.
  3. Gradually add the flour, baking soda, and salt, mixing by hand until just combined.
  4. Cover the bowl with plastic wrap and refrigerate the dough for 30-60 minutes.
  5. Preheat the oven to 350ºF and prepare a baking sheet lined with silicone.
  6. Roll the chilled dough into balls and coat them in sugar before placing them on the prepared baking sheet.
  7. Bake for 11-13 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
