Bright and Chewy Lemon Cookies for Any Occasion

Lemon Cookies made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 1 cup 226g unsalted butter
  • 1 1/2 cups 300g granulated sugar
  • 3 Tbsp lemon zest
  • 2 Tbsp fresh lemon juice
  • 1 large egg
  • 3 cups 360g all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup 50g sugar for rolling

Instructions

  • In a mixing bowl, beat the butter, sugar, and lemon zest together until creamy.
  • Add the lemon juice and egg, mixing until fully combined.
  • Gradually add the flour, baking soda, and salt, mixing by hand until just combined.
  • Cover the bowl with plastic wrap and refrigerate the dough for 30-60 minutes.
  • Preheat the oven to 350ºF and prepare a baking sheet lined with silicone.
  • Roll the chilled dough into balls and coat them in sugar before placing them on the prepared baking sheet.
  • Bake for 11-13 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
