Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 package (3.4 oz) instant pistachio pudding mix
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pistachios
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the pistachio pudding mix until well combined.
- In another bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture.
- Stir in chopped pistachios and white chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheets.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container for up to a week.
- For a nuttier flavor, toast the chopped pistachios before adding them to the dough.
