- 4 New York strip steaks (10 ounces each)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped (plus extra for garnish)
- Salt and freshly ground black pepper to taste
- 1 tablespoon butter
- 1 tablespoon fresh thyme (optional)
- ½ cup cooking sherry
- 1 cup heavy cream
Instructions
- Preheat your grill or skillet over medium-high heat.
- In a small bowl, combine garlic, rosemary, salt, and pepper. Rub the mixture over each steak and let sit for 10 minutes.
- Heat butter and olive oil in a large skillet or grill pan. When the butter starts to bubble, add the steaks.
- Cook the steaks for 4-5 minutes on each side for medium-rare, or longer depending on your preferred doneness.
- Add the sherry to the skillet and cook for an additional 2-3 minutes.
- Remove the steaks from the pan and let rest for at least 5 minutes.
- In the same pan, add heavy cream and simmer for 5 minutes until the sauce thickens.
- Serve the steaks topped with the creamy sauce and extra rosemary.
