Ingredients

  • 4 New York strip steaks (10 ounces each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped (plus extra for garnish)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon fresh thyme (optional)
  • ½ cup cooking sherry
  • 1 cup heavy cream

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. In a small bowl, combine garlic, rosemary, salt, and pepper. Rub the mixture over each steak and let sit for 10 minutes.
  3. Heat butter and olive oil in a large skillet or grill pan. When the butter starts to bubble, add the steaks.
  4. Cook the steaks for 4-5 minutes on each side for medium-rare, or longer depending on your preferred doneness.
  5. Add the sherry to the skillet and cook for an additional 2-3 minutes.
  6. Remove the steaks from the pan and let rest for at least 5 minutes.
  7. In the same pan, add heavy cream and simmer for 5 minutes until the sauce thickens.
  8. Serve the steaks topped with the creamy sauce and extra rosemary.
