Description

Ingredients

  • 250g bread flour
  • 20g granulated sugar
  • 3g salt
  • 4g instant yeast
  • 125ml milk
  • 30g unsalted butter, softened
  • 20g black sesame paste
  • 10g milk powder

Instructions

  1. Combine bread flour, sugar, salt, yeast, and milk powder in a large bowl.
  2. Add milk and mix until a shaggy dough forms.
  3. Knead the dough until smooth and elastic, about 10-15 minutes.
  4. Add softened butter and continue kneading until fully incorporated.
  5. Divide the dough into two equal portions.
  6. Knead black sesame paste into one portion until evenly distributed.
  7. Shape both dough portions into balls.
  8. Place both dough balls in a lightly oiled bowl, cover, and let rise until doubled in size, about 1-1.5 hours.
  9. Punch down the dough and divide each portion into three equal pieces.
  10. Roll each piece into a rectangle.
  11. Layer the black sesame dough rectangles and plain dough rectangles alternately.
  12. Roll the layered dough tightly into a log.
  13. Place the log into a greased loaf pan.
  14. Cover and let rise again until almost doubled, about 45-60 minutes.
  15. Preheat oven to 180°C (350°F).
  16. Bake for 30-35 minutes, or until golden brown.
  17. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  • Toast the black sesame seeds before grinding them for a richer flavor.
  • Ensure the butter is truly softened, not melted, for easier incorporation.
