- 2 cups cottage cheese
- 3 large eggs
- 1 large apple, peeled and finely diced
- 1/2 cup rolled oats or almond flour
- 1/4 cup maple syrup or honey
- 1 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Whisk cottage cheese, eggs, maple syrup, and vanilla in a bowl.
- Stir in oats (or almond flour), cinnamon, and baking powder.
- Fold in diced apples.
- Pour into baking dish and spread evenly.
- Bake for 35-40 minutes until golden and toothpick comes out clean.
- Let cool slightly before slicing and serving.
Notes
- For a gluten-free option, use almond flour instead of rolled oats.
- Adjust sweetness by adding more or less maple syrup or honey.
- Can be served warm or cold.
