Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground turkey or chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and ground turkey or chicken, cooking until the meat is browned.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the broken lasagna noodles and cook until al dente.
  5. Stir in the heavy cream, spinach, ricotta cheese, and half of the mozzarella cheese.
  6. Season with salt and pepper to taste.
  7. Simmer for a few minutes until heated through.
  8. Serve hot, garnished with remaining mozzarella and Parmesan cheese.

Notes

  • Feel free to add other vegetables like mushrooms or zucchini for extra flavor.
