Description

A delicious and healthy Tuscan Chicken and Spaghetti Squash recipe that combines tender chicken with flavorful spices and roasted spaghetti squash.


Ingredients

  • 2 chicken breasts
  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil on the cut sides of the squash and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. In a skillet, heat olive oil over medium heat and add minced garlic.
  6. Add chicken breasts to the skillet and cook until browned and cooked through, about 6-7 minutes per side.
  7. Remove chicken from the skillet and let it rest.
  8. In the same skillet, add cherry tomatoes and spinach, cooking until the spinach wilts.
  9. Slice the chicken and return it to the skillet, mixing with the vegetables.
  10. Once the squash is done, use a fork to scrape the flesh into strands and serve topped with the chicken and vegetable mixture.
  11. Sprinkle with Parmesan cheese if desired.

Notes

  • For a spicier version, add red pepper flakes.
  • This dish can be made ahead and reheated.
  • Feel free to substitute chicken with turkey or tofu for a different protein option.
