Description
A delicious and healthy Tuscan Chicken and Spaghetti Squash recipe that combines tender chicken with flavorful spices and roasted spaghetti squash.

- 2 chicken breasts
- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil on the cut sides of the squash and season with salt and pepper.
- Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
- In a skillet, heat olive oil over medium heat and add minced garlic.
- Add chicken breasts to the skillet and cook until browned and cooked through, about 6-7 minutes per side.
- Remove chicken from the skillet and let it rest.
- In the same skillet, add cherry tomatoes and spinach, cooking until the spinach wilts.
- Slice the chicken and return it to the skillet, mixing with the vegetables.
- Once the squash is done, use a fork to scrape the flesh into strands and serve topped with the chicken and vegetable mixture.
- Sprinkle with Parmesan cheese if desired.
Notes
- For a spicier version, add red pepper flakes.
- This dish can be made ahead and reheated.
- Feel free to substitute chicken with turkey or tofu for a different protein option.
