Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup butternut squash, cubed
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a medium bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, oregano, salt, and pepper. Mix well and form into 1-inch meatballs.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and diced tomatoes. Add butternut squash, basil, and thyme. Bring to a simmer.
  5. Carefully add the turkey meatballs to the simmering broth.
  6. Reduce heat to low, cover, and cook for 20-25 minutes, or until the meatballs are cooked through and the squash is tender.
  7. Season with salt and pepper to taste.
  8. Ladle the turkey meatball soup into bowls and garnish with fresh parsley.

  • For a low-carb or keto turkey meatball soup, use almond flour or crushed pork rinds instead of breadcrumbs.
