- 1 pound mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries
- 1/2 cup fresh strawberries, chopped
- 1/2 cup fresh blueberries
- 2 cups strong brewed coffee, cooled
- 24 ladyfingers
- 1 tablespoon cocoa powder (for dusting)
- Fresh mint leaves for garnish
Instructions
- In a large mixing bowl, whisk the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold in the fresh raspberries, strawberries, and blueberries into the mascarpone mixture.
- Quickly dip the ladyfingers into the cooled coffee, one at a time, ensuring they are moist but not soggy.
- Arrange a layer of soaked ladyfingers at the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
- Add another layer of soaked ladyfingers on top of the mascarpone mixture.
- Spread the remaining mascarpone mixture over the second layer of ladyfingers.
- Cover and refrigerate the tiramisu for at least 4 hours, or preferably overnight, to allow the flavors to meld.
- Just before serving, dust the top of the tiramisu with cocoa powder and garnish with fresh mint leaves.
Notes
- For best results, refrigerate overnight.
- Feel free to substitute the berries with your favorite fruits.
- Ensure the coffee is cooled before dipping the ladyfingers.
