Ingredients

  • 1 pound mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh strawberries, chopped
  • 1/2 cup fresh blueberries
  • 2 cups strong brewed coffee, cooled
  • 24 ladyfingers
  • 1 tablespoon cocoa powder (for dusting)
  • Fresh mint leaves for garnish

Instructions

  1. In a large mixing bowl, whisk the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
  2. Gently fold in the fresh raspberries, strawberries, and blueberries into the mascarpone mixture.
  3. Quickly dip the ladyfingers into the cooled coffee, one at a time, ensuring they are moist but not soggy.
  4. Arrange a layer of soaked ladyfingers at the bottom of a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
  6. Add another layer of soaked ladyfingers on top of the mascarpone mixture.
  7. Spread the remaining mascarpone mixture over the second layer of ladyfingers.
  8. Cover and refrigerate the tiramisu for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  9. Just before serving, dust the top of the tiramisu with cocoa powder and garnish with fresh mint leaves.

Notes

  • For best results, refrigerate overnight.
  • Feel free to substitute the berries with your favorite fruits.
  • Ensure the coffee is cooled before dipping the ladyfingers.
