Description

Ingredients

  • 2 racks of St. Louis-style ribs
  • 1/4 cup brown sugar
  • 1/4 cup paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup barbecue sauce (your favorite)

Instructions

  1. Preheat your grill to medium heat (about 350°F).
  2. Remove the membrane from the back of the ribs. Pat the ribs dry with paper towels.
  3. In a small bowl, combine brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne pepper. This is your dry rub.
  4. Rub the seasoning mixture generously over both sides of the ribs.
  5. Place the ribs on the grill, bone side down, and cook for 2-3 hours, turning occasionally. If you have a two-zone setup, you can cook the ribs on indirect heat for most of the time and finish over direct heat to get a nice char.
  6. During the last 10 minutes of cooking, brush the ribs with your favorite barbecue sauce and cook until it caramelizes and becomes sticky.
  7. Remove the ribs from the grill, let rest for 5 minutes, and then slice between the bones to serve.

  • For best results, use a meat thermometer to ensure ribs are cooked to a safe temperature.
