A delicious recipe for Sweet and Savory Grilled St. Louis Ribs that combines a flavorful dry rub with a sticky barbecue sauce.

- 2 racks of St. Louis-style ribs
- 1/4 cup brown sugar
- 1/4 cup paprika
- 1 tablespoon black pepper
- 1 tablespoon salt
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup barbecue sauce (your favorite)
Instructions
- Preheat your grill to medium heat (about 350°F).
- Remove the membrane from the back of the ribs. Pat the ribs dry with paper towels.
- In a small bowl, combine brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne pepper. This is your dry rub.
- Rub the seasoning mixture generously over both sides of the ribs.
- Place the ribs on the grill, bone side down, and cook for 2-3 hours, turning occasionally. If you have a two-zone setup, you can cook the ribs on indirect heat for most of the time and finish over direct heat to get a nice char.
- During the last 10 minutes of cooking, brush the ribs with your favorite barbecue sauce and cook until it caramelizes and becomes sticky.
- Remove the ribs from the grill, let rest for 5 minutes, and then slice between the bones to serve.
Notes
- For best results, use a meat thermometer to ensure ribs are cooked to a safe temperature.
- Feel free to adjust the spice levels in the dry rub according to your taste.
