Description

A refreshing no-bake dessert that combines the flavors of strawberry and lemon in a creamy icebox cake.


Ingredients

  • 2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1 cup strawberries, pureed
  • 1 cup strawberries, sliced for garnish
  • 1/2 cup lemon juice, freshly squeezed
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (14 oz) graham crackers

Instructions

  1. In a large bowl, beat the heavy whipping cream until soft peaks form.
  2. In another bowl, beat the cream cheese until smooth, then add the powdered sugar, lemon juice, and vanilla extract. Mix until well combined.
  3. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Spread a layer of the cream mixture in the bottom of a 9×13-inch baking dish.
  5. Place a layer of graham crackers over the cream, then spread another layer of the cream mixture on top.
  6. Repeat the layers until all ingredients are used, finishing with the cream mixture.
  7. Cover and refrigerate for at least 4 hours or overnight to allow the cake to set.
  8. Before serving, garnish with sliced strawberries.

Notes

  • For best results, refrigerate overnight.
  • Feel free to adjust the sweetness by adding more or less powdered sugar.
  • Can be made with other fruits like blueberries or raspberries.
