Description

These easy Strawberry Crumb Bars feature a buttery crust, a sweet fresh strawberry filling, and a crunchy butter crumb topping. They are perfect for an afternoon snack, summer parties, picnics, or potlucks.


Ingredients

  • 2 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 cup unsalted butter, VERY COLD and cut into small cubes
  • ⅓ cup granulated sugar
  • 4 teaspoons cornstarch
  • 3 cups fresh strawberries, hulled and chopped

Instructions

  1. Make the Crumb Crust and Topping: In a medium bowl, stir together flour, ½ cup granulated sugar, baking powder, and salt. In a small bowl, beat the egg. Add the beaten egg and vanilla extract to the flour mixture and stir until combined. Cut in the cold butter using a fork, pastry cutter, or food processor until the mixture becomes crumbly.
  2. Make the Strawberry Filling: In a separate bowl, mix ⅓ cup granulated sugar and cornstarch. Add the chopped fresh strawberries and stir gently to coat them.
  3. Assemble the Strawberry Crumb Bars: Preheat your oven to 375°F (190°C). Lightly grease or line a 9×13-inch (23x33cm) baking pan with parchment paper. Press half of the crumb mixture into the bottom of the pan to form an even layer. Spoon the strawberry mixture evenly over the dough layer. Crumble the remaining dough on top of the strawberry layer.
  4. Bake the Strawberry Crumb Bars: Bake for 45 minutes, or until the topping is light golden brown.
  5. Cool and Serve: Let the bars cool in the pan for 10–15 minutes. Cut into bars or squares and serve warm or at room temperature.
