This slow cooker pork roast recipe creates a hearty and comforting meal. The pork cooks low and slow with potatoes and carrots in a flavorful beefy onion broth, resulting in fall-apart tender meat with savory flavor. It’s an effortless dinner that tastes like it took all day.
Ingredients
- 5–6 pounds pork shoulder butt roast
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bag (1.5 pounds) yellow or red baby potatoes, halved
- 12 ounces carrots, cut into large pieces
- 1 box (2.2 oz) beefy onion soup mix (use both packets)
- 2 cups beef broth or beef stock
- 2 tablespoons cornstarch
- 1 tablespoon cold water
Instructions
- Pat the pork roast dry with paper towels. Season all sides of the pork with kosher salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the pork roast and sear until browned on all sides.
- Place the seared pork roast into the slow cooker. Add the halved baby potatoes and carrots around the roast.
- Sprinkle the beefy onion soup mix over everything, then pour the beef broth on top.
- Cover and cook on LOW for 8-10 hours or on HIGH for 7-8 hours.
- In a small bowl, whisk together cornstarch and cold water to create a slurry.
- Pour the slurry into the slow cooker and stir to combine.
- Continue cooking, covered, until the gravy has thickened to your preference.
- Shred or slice the pork and serve with the potatoes and carrots. Drizzle with extra gravy.
Notes
- Carrots: You can use baby carrots or cut regular carrots into 3-5 large pieces.
- Beef Broth: Full salted beef broth, beef stock, or beef bone broth are recommended. Use reduced-sodium if sensitive to salt.
- Pork Roast: Pork shoulder butt roast (boston butt) is common and has more marbling. Pork sirloin roast is leaner. Bone-in or boneless cuts are fine.
