A quick and delicious shrimp and asparagus stir-fry with mushrooms, perfect for a healthy meal.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 8 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add shrimp and cook until pink, about 2-3 minutes.
- Add asparagus and mushrooms, and stir-fry for another 5 minutes.
- Pour in soy sauce and sesame oil, and stir to combine.
- Season with salt and pepper to taste.
- Serve hot over rice or noodles.
Notes
- For a spicier dish, add red pepper flakes.
- Can substitute shrimp with chicken or tofu for a different protein.
- Fresh asparagus is recommended for the best flavor.
