Sausage Egg and Cheese Breakfast Roll-Ups are delicious and easy-to-make breakfast options perfect for busy mornings.

- 8 large eggs
- Salt and pepper to taste
- 1 tablespoon milk
- 1 tablespoon butter
- 8 breakfast sausage links
- 8 flour tortillas (8-inch size)
- 1 cup shredded cheddar cheese
- Cooking spray
Instructions
- In a bowl, whisk together the eggs, salt, pepper, and milk until well combined.
- Heat a non-stick skillet over medium heat and add the butter. Pour in the egg mixture and scramble until just set. Remove from heat and set aside.
- In another skillet, cook the sausage links over medium heat until browned and cooked through. Remove from heat and set aside.
- Lightly spray a clean skillet with cooking spray and warm it over medium heat.
- To assemble, lay an 8-inch flour tortilla flat and add a spoonful of scrambled eggs in the center.
- Place a cooked sausage link on top of the eggs.
- Sprinkle with some shredded cheddar cheese.
- Roll up the tortilla tightly to enclose the filling.
- Place the roll-up seam-side down in the pre-heated skillet and cook for 2-3 minutes, or until the tortilla is golden and slightly crisp. Flip and cook the other side for an additional 2-3 minutes.
- Remove from skillet and let cool slightly before serving.
- Repeat with the remaining tortillas and filling.
Notes
- These roll-ups can be made ahead and frozen for quick breakfasts.
- Substitute sausage with your favorite protein or vegetables.
- Adjust the seasoning to your taste.
