  • 1 large onion, finely chopped
  • 2 cloves garlic, minced

  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a medium saucepan, heat the butter and olive oil over medium heat. Once hot, add the chopped onions and sauté until they turn golden brown, about 8-10 minutes.
  2. Add the minced garlic to the pan and sauté for an additional 1-2 minutes until fragrant.
  3. Stir in the rice, and cook for 1-2 minutes to toast it lightly.
  4. Pour in the chicken broth and add salt and pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pan, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
