A refreshing and cool cucumber lemonade perfect for summer days.


Ingredients

  • 2 large cucumbers, peeled and sliced
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 1/2 cup granulated sugar (adjust to taste)
  • 4 cups cold water
  • lemon slices and cucumber slices for garnish
  • Fresh mint leaves (optional)

Instructions

  1. Place the sliced cucumbers into a blender and puree until smooth.
  2. Strain the cucumber puree through a fine mesh sieve into a large pitcher to remove pulp.
  3. Add the freshly squeezed lemon juice and sugar to the cucumber juice in the pitcher.
  4. Stir until the sugar dissolves completely.
  5. Pour in the cold water and mix well.
  6. Taste and adjust sweetness or tartness by adding more sugar or lemon juice as desired.
  7. Refrigerate the lemonade for at least 1 hour to chill and allow flavors to meld.
  8. Serve over ice cubes, garnished with lemon slices, cucumber slices, and fresh mint leaves if desired.
