- 4 ripe peaches, diced
- 1 cup ricotta cheese
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 baguette, sliced
- 2 tablespoons olive oil
- Fresh basil leaves, for garnish
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the ricotta cheese, honey, lemon juice, salt, and pepper until smooth.
- Brush the baguette slices with olive oil and place them on a baking sheet.
- Toast the bread in the oven for about 5-7 minutes or until golden brown.
- Top each toasted slice with a generous spoonful of the whipped ricotta.
- Add the diced peaches on top of the ricotta.
- Garnish with fresh basil leaves.
- Serve immediately and enjoy!
Notes
- For added flavor, consider drizzling balsamic glaze over the bruschetta before serving.
