Description

A creamy and delicious Queso Spinach Dip made with five simple ingredients, perfect for any gathering. This easy recipe uses Velveeta, cream cheese, spinach, bacon, and Rotel tomatoes, all cooked together in a slow cooker for a crowd-pleasing appetizer.

Ingredients

Scale
  • 16 ounces Velveeta cheese, cubed
  • 10 ounces Frozen spinach, well-drained
  • 8 ounces Cream cheese, cubed
  • 10 ounces Rotel tomatoes
  • 4 ounces Cooked bacon, sliced

Instructions

  1. Thaw the frozen spinach in the microwave or on the stovetop. Squeeze out excess moisture.
  2. In a slow cooker, mix together the cubed Velveeta cheese, well-drained spinach, sliced cooked bacon, Rotel tomatoes, and cubed cream cheese. Stir until evenly combined.
  3. Set the slow cooker to HIGH and cook for about 2 hours, stirring occasionally.
  4. Serve the dip warm with tortilla chips, vegetable sticks, or crackers.

Notes

  • Optional: Add chopped cilantro or diced jalapeños for an extra kick.
  • Ensure spinach is well-drained to prevent a watery dip.
  • Processed cheese like Velveeta melts smoothly; avoid block cheeses.
  • Turkey bacon or vegetarian alternatives can be used instead of regular bacon.
  • Adjust spice level by adding jalapeños or hot sauce.
  • Store leftovers in an airtight container for up to 4 days.
  • Reheat gently on the stovetop over low to medium heat, stirring frequently. Add a splash of milk if it thickens too much.
  • This dip can be made ahead and refrigerated for up to 24 hours before cooking.
