Pumpkin S’mores Cookies are a delightful fall treat that combines the flavors of pumpkin, chocolate, and marshmallow in a soft, chewy cookie.

- 2 ½ cups all-purpose flour
- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- ¾ cup unsalted butter, melted and cooled
- 1 cup light brown sugar
- ¼ cup granulated sugar
- 1 large egg
- ½ cup pumpkin puree, blotted dry
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- ¾ cup graham cracker crumbs
- 10 large marshmallows, cut in half
Instructions
- Preheat oven to 350 °F. Line baking sheets with parchment.
- In a bowl, whisk flour, cornstarch, baking soda, spices, salt, and graham crumbs. Set aside.
- In another bowl, combine melted butter with both sugars, then whisk in egg, pumpkin puree, and vanilla until smooth.
- Fold in the dry mixture until just combined, then stir in chocolate chips.
- Chill dough for 1 hour if desired for thicker cookies.
- Scoop approximately 3 Tbsp of dough per cookie; press with thumb to make a well. Place half a marshmallow inside and cover with dough, leaving marshmallow partially visible.
- Arrange on sheets and bake for 10–14 minutes, until edges are set but the center is still soft.
- Let cookies rest for 10 minutes on the sheet, then transfer to a wire rack to finish cooling.
Notes
- Chilling the dough is optional but recommended for thicker cookies.
- Ensure the marshmallows are partially visible for the best s’mores effect.
