Description

Pineapple Cowboy Candy is a sweet and tangy jam made from fresh pineapple chunks, sugar, and lemon juice, perfect for spreading on toast or using as a topping.


Ingredients

  • 2 tbsp fresh lemon juice

Instructions

  1. Add the pineapple chunks into a large saucepan.

  4. Reduce the heat and simmer for 25–30 minutes, stirring occasionally until the fruit is soft.

  6. Return the mixture to the heat and simmer for another 5-10 minutes, stirring occasionally, until thickened.
  7. The jam will continue to thicken slightly as it cools.
  8. Remove from heat and let it cool for 10–15 minutes.
  9. Transfer the jam to clean jars, cover, and refrigerate.
  10. Use within 2–3 weeks.
