Description

Pierogi Lasagna is a comforting dish that combines the flavors of traditional pierogi with the convenience of lasagna, featuring layers of creamy cottage cheese, mashed potatoes, and cheddar cheese.


Ingredients

  • 1/4 cup butter, cubed
  • 1 medium sweet onion, diced
  • 2 cups 4% cottage cheese, drained well
  • 1 large egg
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3 cups mashed potatoes, warmed (with butter and milk added)
  • 2 cups shredded cheddar cheese, divided
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 12 lasagna noodles, cooked and drained
  • sour cream and diced scallions, for serving

Instructions

  1. Preheat oven to 350 degrees F. Coat a 9×13 baking dish with nonstick spray; set aside.
  2. Melt butter in a nonstick skillet over medium-high heat; add onion and sauté until softened, about 3 minutes.
  3. In a medium bowl, combine cottage cheese, egg, onion powder, garlic powder, and the sautéed onion.
  4. In another bowl, combine the mashed potatoes, 1 cup cheddar cheese, salt, and pepper.
  5. In the prepared baking dish, create layers, starting and ending with noodles:
  6. Lay 3 noodles.
  7. Spread evenly with 1 1/2 cups mashed potato mixture.
  8. Lay 3 noodles.
  9. Spread evenly with all of the cottage cheese mixture.
  10. Lay 3 noodles.
  11. Spread evenly with the remaining 1 1/2 cups mashed potato mixture.
  12. Lay 3 noodles.
  13. Top with the remaining 1 cup cheddar cheese.
  14. Cover and bake for 25-30 minutes or until heated through.
  15. Let stand 10-15 minutes before slicing into squares – this will help it solidify and prevent everything from oozing out.
  16. Slice and serve with a dollop of sour cream and a few diced scallions.

Notes

  • Ensure the cottage cheese is well-drained for the best texture.
  • Letting the lasagna rest before slicing helps it hold its shape.
