- 1 tablespoon reduced sodium soy sauce
- 5 1/2 cups water (or beef broth)
- 1 12 oz. can evaporated milk
- 1/2 tablespoon cornstarch
- 2 tablespoons beef bouillon (optional)
- 1 tablespoon fresh parsley, minced (or 1 tsp dried)
- 2 teaspoons fresh thyme, minced (or ¾ tsp dried)
- 1/2 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp pepper
- 1 pound short cut pasta, uncooked (e.g., orecchiette)
- 5 oz. freshly shredded Gruyere cheese
- 1/4 cup freshly shredded Parmesan Cheese
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil and butter over medium heat.
- Add sliced onions, salt, and pepper. Cook until onions are caramelized, about 20-25 minutes.
- Stir in minced garlic and red pepper flakes, cooking for an additional minute.
- Add Worcestershire sauce, soy sauce, water (or beef broth), evaporated milk, and cornstarch. Stir to combine.
- Mix in beef bouillon, parsley, thyme, oregano, paprika, and pepper.
- Bring the mixture to a boil, then add the uncooked pasta.
- Reduce heat and simmer until pasta is cooked, about 10-12 minutes.
- Stir in Gruyere and Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh parsley if desired.
Notes
- For a vegetarian version, omit the beef bouillon and use vegetable broth instead of water.
- Feel free to adjust the amount of red pepper flakes to your spice preference.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
