A refreshing and easy-to-make no-bake dessert featuring layers of creamy pineapple filling and a crunchy crust, perfect for summer gatherings.

- 1 can (20 oz) crushed pineapple, drained
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped topping
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/2 cup shredded coconut (optional)
Instructions
- In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed.
- Press the mixture into the bottom of a 9×13 inch baking dish to form the crust.
- In another bowl, beat the cream cheese until smooth, then add the powdered sugar and mix until well combined.
- Fold in the whipped topping and drained crushed pineapple into the cream cheese mixture.
- Spread the pineapple cream mixture over the crust evenly.
- If desired, sprinkle shredded coconut on top.
- Refrigerate for at least 4 hours or until set before serving.
Notes
- For a tropical twist, add chopped nuts or maraschino cherries on top.
- This dessert can be made a day in advance for convenience.
- Store leftovers in the refrigerator for up to 3 days.
