A simple one-pan meal featuring crispy potatoes, juicy lemony chicken, tender green beans, and briny olives, all roasted together for an easy weeknight dinner that impresses.

- 1.5 lbs boneless, skinless chicken thighs
- 1.5 lbs baby Yukon Gold potatoes, quartered
- 1 lb green beans, trimmed
- 1/2 cup Kalamata olives, pitted
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the quartered potatoes with 2 tablespoons of olive oil, half of the minced garlic, oregano, thyme, salt, and pepper. Spread them in a single layer on a large baking sheet.
- Roast the potatoes for 20 minutes.
- While the potatoes roast, pat the chicken thighs dry. In the same bowl (no need to wash), whisk together the remaining 2 tablespoons of olive oil, lemon juice, the rest of the minced garlic, salt, and pepper. Add the chicken thighs and toss to coat.
- Add the green beans and Kalamata olives to the bowl with the chicken and toss to combine.
- After the potatoes have roasted for 20 minutes, carefully remove the baking sheet from the oven. Add the coated chicken, green beans, and olives to the baking sheet, arranging them in a single layer around the potatoes.
- Return the baking sheet to the oven and roast for another 20-25 minutes, or until the chicken is cooked through and the potatoes are crispy and tender.
- Garnish with fresh parsley before serving.
Notes
- You can use chicken breasts instead of thighs, but adjust the cooking time to prevent them from drying out.
- Feel free to add other Mediterranean vegetables like bell peppers or red onion to the sheet pan.
- For extra lemon flavor, you can add lemon slices to the pan during the last 10 minutes of roasting.
