Ingredients
Ground Chicken: 1 lb (preferably a mix of lean and a little fat for moisture)
Red Onion: 1 small, finely chopped
Garlic: 2 cloves, minced
Fresh Parsley: 1/4 cup, chopped
Fresh Mint: 2 tbsp, chopped
Dried Oregano: 1 tsp
Lemon Zest: From 1 lemon
Egg: 1 (lightly beaten)
Breadcrumbs: 1/2 cup (panko or regular)
Feta Cheese (optional): 1/4 cup, crumbled
Salt and Pepper: To taste
Olive Oil: For cooking
Instructions
Prepare the Mixture:
In a large bowl, combine the ground chicken, chopped red onion, minced garlic, parsley, mint, and dried oregano.
Add the lemon zest, beaten egg, breadcrumbs, and, if using, crumbled feta cheese.
Season with salt and pepper.
Mix thoroughly until all ingredients are well incorporated, but avoid overmixing to keep the patties tender.
Form the Patties:
Divide the mixture into 6–8 equal portions.
Shape each portion into a patty (about 1/2-inch thick) and place them on a plate.
Cook the Patties:
Heat a drizzle of olive oil in a large skillet over medium-high heat.
Add the chicken patties to the skillet. Cook for about 4–5 minutes per side, or until each side is golden brown and the internal temperature reaches 165°F.
Work in batches if necessary, ensuring the patties aren’t crowded.
