Description

Ingredients

  • 6 cups peeled, cored, and finely chopped apples (about 67 medium apples; Granny Smith + Honeycrisp work great)
  • 1 cup apple cider or apple juice
  • 4 cups granulated sugar
  • 1 packet powdered fruit pectin (or 3 Tbsp liquid pectin)
  • 1 Tbsp fresh lemon juice
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ¼ tsp ground cloves
  • 1 tsp vanilla extract

Instructions

  1. Sterilize 5–6 half-pint jars and lids by boiling for 10 minutes or running through dishwasher on hot cycle.
  2. In a large pot, combine chopped apples and apple cider. Simmer over medium heat until apples soften, about 10–12 minutes.
  3. Use potato masher for chunky texture or immersion blender for smoother consistency.
  4. Stir in sugar, lemon juice, cinnamon, nutmeg, allspice, and cloves. Bring mixture to a rolling boil, stirring frequently.
  5. Sprinkle in pectin and boil hard for 1–2 minutes, stirring constantly, until jam thickens properly.
  6. Remove from heat and stir in vanilla extract.
  7. Ladle hot jam into sterilized jars, leaving ¼-inch headspace. Wipe rims clean and apply lids.
  8. Process jars in boiling water bath for 10 minutes for shelf-stable storage.
  9. Remove jars and let cool undisturbed for 24 hours until properly sealed.
