Description
A comforting casserole combining meatloaf and mac and cheese.
Ingredients
- Ground Beef: 1 lb
- Onion: 1/2 cup, diced
- Breadcrumbs: 1/2 cup
- Egg: 1 large
- Milk: 1/4 cup
- Salt: 1 tsp
- Pepper: 1/2 tsp
- Macaroni: 2 cups, uncooked
- Cheddar Cheese: 2 cups, shredded
- Butter: 2 tbsp
- Flour: 2 tbsp
- Milk: 2 cups
- Salt: 1/2 tsp
- Pepper: 1/4 tsp
- Paprika: 1/2 tsp
- Dry Mustard: 1/2 tsp
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix well and press into the bottom of a greased 9×13-inch baking dish.
- Bake for 20 minutes.
- While the meatloaf is baking, cook macaroni according to package directions. Drain and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened.
- Stir in salt, pepper, paprika, dry mustard, and 1 1/2 cups of cheese until melted.
- Stir cooked macaroni into cheese sauce. Pour over partially cooked meatloaf. Sprinkle remaining cheese on top.
- Return to oven and bake for an additional 25 minutes or until cheese is melted and bubbly.
