Ingredients

- 2 pounds russet potatoes (peeled and cubed)
- 3 tablespoons olive oil
- 1 ounce ranch seasoning mix
- Salt and black pepper to taste
- 1 1/2 pounds boneless skinless chicken breasts (cut into bite-sized pieces)
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/2 cup chopped green onions
- Nonstick cooking spray
Instructions
- Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish with nonstick spray.
- Toss cubed potatoes with olive oil and ranch seasoning. Season with salt and pepper. Spread in baking dish and bake for 25–30 minutes.
- Season chicken with salt and pepper. Top cooked potatoes with chicken, cheese, and bacon. Bake for an additional 20–25 minutes.
- Garnish with green onions before serving.
