Description

Ingredients

  • 2 pounds russet potatoes (peeled and cubed)
  • 3 tablespoons olive oil
  • 1 ounce ranch seasoning mix
  • Salt and black pepper to taste
  • 1 1/2 pounds boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup chopped green onions
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish with nonstick spray.
  2. Toss cubed potatoes with olive oil and ranch seasoning. Season with salt and pepper. Spread in baking dish and bake for 25–30 minutes.
