- 1 pound jumbo shrimp, peeled, deveined, and tails removed
- 8 ounces rotini or fusilli pasta
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon Old Bay seasoning
- 1 cup diced celery
- 1 cup diced bell pepper (any color)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water. Set aside.
- Prepare the shrimp: In a skillet over medium heat, add olive oil. Add shrimp and sprinkle with salt, pepper, and Old Bay seasoning. Cook until pink and opaque, about 3-4 minutes. Remove from heat and let cool.
- Mix the dressing: In a large bowl, combine mayonnaise, Dijon mustard, lemon juice, and salt and pepper. Whisk until blended.
- Combine all ingredients: Add the cooled pasta, shrimp, celery, and bell pepper to the dressing. Gently fold until well coated.
- Chill and serve: Cover and refrigerate for at least 30 minutes. Garnish with fresh parsley before serving.
