A hearty and flavorful homemade vegetable gnocchi soup that is perfect for any occasion.
Ingredients

- 1 yellow onion, diced
- 3 garlic cloves, minced
- 2 celery sticks, chopped
- 2 carrot sticks, sliced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp basil
- 1/2 tsp oregano
- 56 oz chicken broth (or veggie broth)
- 1 can diced tomatoes (45 oz)
- 3/4 cup frozen corn
- 3/4 cup frozen peas
- 12 oz gnocchi
- salt
- pepper
Instructions
- Start by adding the olive oil, onion, carrot, and celery to a large pot or dutch oven on the stove over medium heat. Sauté for about 5 minutes or until soft & fragrant.
- Next, add in the garlic, Italian seasoning, basil, oregano, and salt & pepper. Sauté for another 5 minutes.
- Then add the chicken broth, diced tomatoes, frozen corn, and frozen peas. Bring to a boil and boil for 10 minutes.
- Reduce the heat to a simmer, add the gnocchi, and let cook for about 5 minutes or until fully cooked through. Add salt & pepper to taste.
- Garnish with fresh parsley and enjoy!
Notes
- Feel free to add any other vegetables you like.
- This soup can be made vegetarian by using vegetable broth.
- Store leftovers in the refrigerator for up to 3 days.
