- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 bottle (12 oz) pale ale beer
- 1 cup milk
- 2 cups shredded white cheddar cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the butter and olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, or until softened.
- Add the minced garlic and cook for another minute, until fragrant.
- Sprinkle in the flour, stirring constantly to form a roux. Cook for 2 minutes to remove the raw flour taste.
- Slowly pour in the chicken broth while stirring to prevent lumps. Follow with the pale ale beer, continuing to stir until smooth.
- Reduce the heat to low and add the milk, stirring to combine.
- Gradually stir in the shredded white cheddar cheese and mozzarella cheese until melted and smooth.
- Season with salt and pepper to taste.
- Simmer for 5-10 minutes, stirring occasionally, until the soup thickens and reaches a creamy consistency.
- Serve hot, garnished with fresh parsley.
Notes
- This soup can be made ahead of time and reheated before serving.
- For a thicker soup, add more flour to the roux.
- Feel free to substitute the pale ale with another type of beer if desired.
