- 8 large eggs
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the hash browns, eggs, milk, salt, and pepper.
- Add the diced onion and bell pepper, mixing well.
- Spread the mixture evenly in a greased 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese on top.
- Bake for 45-50 minutes or until the eggs are set and the top is golden brown.
- Let it cool for a few minutes before serving.
