- 1 lb boneless pork (tenderloin or chops), thinly sliced
- 2 tablespoons fresh ginger, grated
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 tablespoon honey
- 1 tablespoon olive oil
- ½ teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 1 cup jasmine rice
- 1 cup full-fat coconut milk
- 1 cup water
- ½ teaspoon salt
- For Serving (optional): lime wedges, chopped cilantro, sliced green onions
Instructions
- In a bowl, whisk together ginger, garlic, soy sauce, lime juice, honey, olive oil, red pepper flakes, salt, and pepper. Add pork, toss to coat, and marinate for 30 minutes (or up to 2 hours).
- Rinse jasmine rice until water runs clear. In a saucepan, combine rice, coconut milk, water, and salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Let rest, covered, for 10 minutes.
- Heat a skillet over medium-high heat. Add pork (in batches if needed) and cook 3–4 minutes per side until golden and caramelized.
- Fluff the coconut rice with a fork. Divide rice among plates; top with pork. Garnish with cilantro, green onions, and lime wedges.

- Marinating the pork for longer enhances the flavor.
- Adjust the amount of red pepper flakes according to your spice preference.
- For a vegan option, substitute pork with tofu or tempeh.
