  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup jasmine rice
  • 1 cup full-fat coconut milk
  • 1 cup water
  • ½ teaspoon salt
  • For Serving (optional): lime wedges, chopped cilantro, sliced green onions

Instructions

  1. In a bowl, whisk together ginger, garlic, soy sauce, lime juice, honey, olive oil, red pepper flakes, salt, and pepper. Add pork, toss to coat, and marinate for 30 minutes (or up to 2 hours).
  2. Rinse jasmine rice until water runs clear. In a saucepan, combine rice, coconut milk, water, and salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Let rest, covered, for 10 minutes.
  3. Heat a skillet over medium-high heat. Add pork (in batches if needed) and cook 3–4 minutes per side until golden and caramelized.
  4. Fluff the coconut rice with a fork. Divide rice among plates; top with pork. Garnish with cilantro, green onions, and lime wedges.
