Ingredients

  • 1 ½ lbs boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 cup cornstarch
  • 2 large eggs, beaten
  • 2 cups vegetable oil (for frying)
  • ½ cup low-sodium soy sauce
  • ⅓ cup rice vinegar
  • ½ cup sugar
  • 1 tablespoon hoisin sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 68 dried red chilies
  • 2 tablespoons vegetable oil
  • Chopped green onions (optional garnish)
  • Toasted sesame seeds (optional garnish)

Instructions

  1. In a medium bowl, coat the chicken pieces in beaten egg, then toss in cornstarch until fully coated.
  2. Heat 2 cups of vegetable oil in a deep skillet or wok over medium-high heat. Fry chicken in batches until golden and crispy, about 4–5 minutes per batch. Drain on paper towels.
  3. In a separate pan, heat 2 tablespoons vegetable oil over medium heat. Add garlic, ginger, and dried chilies. Sauté for about 30 seconds until fragrant.
  4. Pour in soy sauce, rice vinegar, sugar, hoisin sauce, and sesame oil. Bring to a simmer.
  5. Stir in the cornstarch slurry and simmer until sauce thickens, about 2 minutes.
  6. Toss fried chicken into the sauce and stir until all pieces are well-coated.
  7. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • Adjust the number of dried red chilies based on your spice preference.
  • For a healthier version, consider baking the chicken instead of frying.
  • Serve with steamed rice or vegetables for a complete meal.
