Ingredients

Scale
  • For the Chicken:
  • 4 pieces Chicken Thighs
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 3 cloves Garlic
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Oregano
  • Salt to taste
  • Pepper to taste
  • For the Rice:
  • 1 medium Onion
  • 1 cup Bell Peppers (Red & Yellow)
  • 1 teaspoon Turmeric
  • 1 cup Jasmine Rice
  • 2 cups Chicken Broth
  • 1 cup Frozen Corn
  • For the Sauce:
  • 1/2 cup Peri-Peri Sauce
  • 1/2 cup Heavy Cream
  • 1 tablespoon Lemon Juice
  • Pinch of Salt

Instructions

  1. Marinate Chicken: Combine olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, and pepper in a bowl. Add chicken thighs, coat well, cover, and marinate for at least 30 minutes, or preferably overnight.
  2. Prepare Rice: Heat oil in a medium pot. Sauté chopped onion and bell peppers until soft. Add crushed garlic and turmeric, cook for 30 seconds. Stir in jasmine rice and chicken broth. Season with salt and bring to a simmer. Cover and cook for 10 minutes, or until liquid is absorbed.
  3. Add Corn: Gently stir in frozen corn. Reduce heat, cover, and steam for another 10 minutes. Turn off heat and let sit, covered.
  4. Make Sauce: In a saucepan, combine peri-peri sauce, heavy cream, lemon juice, and a pinch of salt. Simmer over medium heat for 5 minutes until slightly thickened.
  5. Cook Chicken: Heat a grill pan over high heat. Grill marinated chicken for 6-7 minutes per side, until golden brown and cooked through (internal temperature 165°F).
  6. Serve: Arrange grilled chicken over the rice. Drizzle generously with creamy peri-peri sauce. Serve warm.

Notes

  • Garnish with fresh cilantro for added flavor and color.
  • For a leaner option, substitute chicken thighs with chicken breast.
  • Avocado oil can be used instead of olive oil for a higher smoke point.
  • Vinegar can substitute for lemon juice in the marinade.
  • Regular paprika can be used instead of smoked paprika, but the smoky flavor will be less pronounced.
  • Italian seasoning can replace oregano.
  • Red or yellow onions, or shallots, work well for the rice.
  • Any sweet pepper can substitute for red and yellow bell peppers.
  • Saffron can be used instead of turmeric for a more luxurious touch.
  • Basmati or long-grain white rice can substitute for jasmine rice.
  • Vegetable broth can be used for a vegetarian version of the rice.
  • Fresh or canned corn can be used instead of frozen corn.
  • Sriracha or a homemade chili sauce can substitute for peri-peri sauce.
  • Coconut cream can replace heavy cream for a non-dairy option.
  • Ensure chicken reaches an internal temperature of 165°F for safety.
